Where The Sugar Actually Comes From

Two sources feed the advanced glycation end product pool.

The first is endogenous: glucose molecules bonding directly to long lived proteins like collagen and elastin, a slow non enzymatic reaction called the Maillard reaction, the same one that browns a steak.

The second is exogenous: advanced glycation end products already formed in food before you eat it, absorbed directly through the gut wall.

The exogenous source is the one nobody in mainstream nutrition talks about, and it’s the one you control most easily.
